It's Masterchef time! This week on Masterchef, the contestants are in Melbourne, the food capital of Australia and for the first time in this series someone has won the Celebrity Cook-Off Challange! Congrats to Marion..
This week I am making Enchiladas...so yummy and it is hard but simple....Let's begin...
You will need: 
2 chicken breast fillets, poached and shredded
2 shallots, finely chopped
2 cups (160g) grated cheddar cheese
Salt & freshly ground pepper
1/4 cup peanut oil
8 (13-14cm) corn tortillas
1 x 400g can whole peeled tomatoes
1/4 cup coriander leaves
1 large green chilli
1 garlic clove, crushed
1 tbs pouring cream
Prep/Cooking time: 20/40 mins
Instructions:
1. Preheat oven to 190°C. Combine chicken with shallots, half the cheese and season with salt and pepper.
2. Heat oil in a small frying pan over a medium heat. Cook tortillas for 5 seconds on each side or until golden. Drain on paper towel. Divide chicken mixture between the tortillas and roll up tightly. Place seam side down in a 19cm x 27cm ovenproof dish.
3. Place tomatoes, coriander leaves, chilli, garlic, cream into a food processor and process until smooth. Pour over enchiladas and sprinkle with remaining cheese. Bake for 20-25 minutes or until cheese is golden and sauce is bubbling. Place 2 enchiladas on each plate and serve with dishes of sour cream, avocado and Mexican salsa.
Yummy!!! And now, for desert....something simple...Waffles with Ice-cream and white chocolate sauce...*drools*

You will need:
80g (1/2 cup) white chocolate melts (Nestle brand)
2 tbs warm water
4 frozen waffles
8 scoops (about 50g each) 98 per cent fat-free chocolate
ice-cream (Bulla brand)
Instructions:
1. Place the chocolate melts in a small heatproof bowl over a small saucepan half-filled with simmering water (make sure the bowl doesn't touch the water). Use a metal spoon to stir until the chocolate melts and is smooth. Remove from heat. Add the warm water and stir until smooth.
2. Cook the waffles in a toaster following packet directions. Divide among serving plates. Top each waffle with 2 scoops of chocolate ice-cream and drizzle with white chocolate sauce. Leftovers: Use the chocolate melts in cakes and slices. Use the waffles topped with fresh banana and vanilla ice-cream. Use the chocolate ice-cream in thick shakes.
